Leather Britches Beans

Ingredients:

1 pound bried green beans
2 quarts water
1/4 pound salt pork or slab bacon,
rind removed and diced
  salt and ground pepper

Directions: Rinse beans well. Place in a large heavy pot with water and soak for 1 hour. Add pork and bring to a boil over high heat. Reduce heat to low and simmer gently, stirring occasionally, for 3 hours, until beans are tender. Add more boiling water if necessary to keep beans from burning. Season to taste with salt and pepper. Serve with Corn Pones, Hoe Cakes or Chippewa Bannock.
